Make The Steak

Step 1. Salt and pepper

You have a few choices here

  • Salt < 3 minutes
  • Salt > 45 minutes and < 3 days
  • Pepper

Step 2. Roast the steak

  • Preheat to 225-275°F
  • Plop the steak in on wire rack
  • Check at about 20 min

Step 3. Check the oven

  • Start checking at 20 mins
  • 115°F - medium rare
  • 125°F - medum
  • 135°F - medium well
  • When about 3 minutes to done, heat up cast iron to SMOKING
  • My oven: 35 mins for medium rare

Step 4. Sear it

  • (Option) Butter to pan
  • Flip every 15 seconds
  • Sear each side 3 times
  • Sear the edges, then plate

  • Lots of smoke.
    Make sure fan is on
    or door is open!!
