Sleep Inducing Recipe: Southwestern Turkey Burgers and Sweet Potato Fries

Preparation and Ingredients

First, turn your oven on, and preheat it to 450ºF. While your oven is heating up, rinse your produce. Cut your sweet peppers in half lengthwise, remove the seeds, and chop them finely.

Top and tail your scallions and thinly slice them. Also thinly slice your tomatoes. Remove 2 large lettuce leaves and set aside. Chop the sweet potatoes into wedges of around 1 inch thickness. Mince the garlic. Finely chop around half of chipotle and place in a small bowl with chipotle sauce.

Sweet Potato Fries

Toss the cut sweet potato wedges on a baking tray with ½ teaspoon salt, 1½ tablespoon olive oil and a pinch of black pepper. Spread out into a single layer before roasting, flipping them occasionally until they are crisp, golden and tender all over.

Sauté Aromatics

While the sweet potatoes are roasting, place one tablespoon of olive oil into a pan and heat it on medium heat. When the olive oil starts to sizzle, add the sweet peppers, garlic, spices, scallions and ⅛ teaspoon of salt. Continue to heat, stirring continuously, until the vegetables have softened. Transfer the contents of the pan to a bowl and set aside until it cools. Whisk mayonnaise and chipotle together in a bowl to make chipotle aioli. Add salt to taste as desired, and set aside until ready for serving.

Form Burger Patties

Pat-dry the turkey on a paper towel and add to bowl along with the aromatics. Season the mixture with salt and black pepper as your taste desires. Mix well with your hands and form into equally sized burger patties and create a dimple on top of each one with your thumb.

Cook Your Burgers

Place 1 tablespoon of olive oil in a pan and put it over a medium-high heat. When oil is sizzling, place burgers in the pan and sear for 3-4 minutes or until the bottom is brown. Flip and brown the other side as before. Reduce heat and cover. Sear until cooked through evenly for around 5-6 minutes or until no longer pink. Place the burgers onto a serving plate along with the Monterey Jack. Loosely cover with aluminium foil for about 5 minutes to slowly melt the cheese.

Plate-Up Your Burgers

While the cheese is melting, place your bread buns cut-side down in pan and place on a medium heat. Toast for 2-3 minutes until golden and thoroughly heated through. Place the bread bun bottoms on a plate, then build up your burgers, lettuce, and tomato. Drizzle your chipotle aioli on bun tops. Serve burgers with the sweet potato fries and set aside the remaining chipotle aioli for dipping your fries.
