What is phlebotomy? 

The surgical opening or puncture of a vein in order to withdraw blood or introduce a fluid, or (historically) as part of the procedure of letting blood.

In medical programs, you are required to take a phlebotomy class as part of the program

Phlebotomist 

people trained to draw blood from a patient (mostly from veins) for clinical or medical testing, transfusions, donations, or research. Phlebotomists collect blood primarily by performing venipuncture (or, for collections of minute quantities of blood, finger sticks).

Depending on where you live Phlebotomist salary average about the same as a medical assistant.
