Omelet Ingredients:

12 large Norco Ranch eggs

6 Tablespoons sugar

6 Tablespoons toasted pine nuts

¼ cup honey

¾ cup butter

1 ½ cups candied brioche (ingredients and instructions below)

6 Tablespoons lavender custard (ingredients and instructions below)

 

Candied Brioche Ingredients and Instructions:

6 slices brioche, diced into cubes

6 Tablespoons butter

6 Tablespoons sugar

In a saute pan, melt butter and sugar together over medium heat. Add the cubed brioche and cook until the bread is browned and crisp. Remove from heat and set aside until ready to incorporate in the omelet.

 

Lavender Custard Ingredients and Instructions:

6 large Norco Ranch egg yolks

½ cup sugar

1 ½ cups whole milk, divided into two ¾ cup portions

½ cup heavy cream

1 Tablespoon dried food-grade lavender

1 teaspoon vanilla extract

3 Tablespoons cornstarch

In a saucepan, combine half of the milk, the cream, vanilla extract, and lavender. Bring to a boil over medium heat. In a bowl, whisk the egg yolks together with the sugar until the mixture is smooth and yellow. Add the cornstarch to the egg mixture, whisking constantly. Then, add the remaining milk and
