Make The Steak
Step 1. Salt and pepper

You have a few choices here
- Salt < 3 minutes
- Salt > 45 minutes and < 3 days
- Pepper

Step 2. Roast the steak
- Preheat to 225-275°F
- Plop the steak in on wire rack
- Check at about 20 min

Step 3. Check the oven
- Start checking at 20 mins
- 115°F - medium rare
- 125°F - medum
- 135°F - medium well
- When about 3 minutes to done, heat up cast iron to SMOKING
- My oven: 35 mins for medium rare

Step 4. Sear it
- (Option) Butter to pan
- Flip every 15 seconds
- Sear each side 3 times
- Sear the edges, then plate
